Lean Like Laura - Breakfast Quiche

INGREDIENTS:

32oz flavored or unflavored egg beaters
16oz (1pack) Oscar Meyer Deli meat (rinsed)
1 large chopped tomato
Chopped cilantro
1 cup chopped mushrooms
½ chopped red pepper, bell pepper, and/or yellow
3-4 cups fresh spinach
Turmeric, garlic powder, pepper, basil, or any additional seasonings.

DIRECTIONS:

Mix all ingredients in a sprayed, 13x9in stuffing pan. Bake at 350 for 30 minutes. Cut into 6 equal pieces.

OPTIONS:

Try adding broccoli, onions, or use different flavored egg beaters for variations. No cheese flavored egg beaters for contest prep.

NUTRITION:

Serves 6 (women). 143 calories, 26g protein, 7g carbs, .5g fat, 363mg sodium.
Serves 3 (men). 286 calories, 52g protein, 14g carbs, 1g fat, 726mg sodium.
